This Spinach & Cheese Omelette is seriously one of the best omelettes I have ever tasted. It has an incredible depth of flavors and it´s made with the most basic ingredients. But the past part about this omelette? It all comes together in just about 10 minutes.

When I said basic ingredients, I meant basic ingredients. Garlic, onions, spinach, cheese and eggs. This omelette is super healthy, gluten free and naturally low carb. The perfect dish during these hard times we´re living in.

You can serve this Spinach & Cheese Omelette for the ultimate breakfast, yet it´s bold enough to serve for dinner, next to some yummy roasted potatoes.

TIPS & TRICKS to make this Recipe: I used fresh bagged spinach, but if you prefer, you can use frozen spinach, Just make sure you thaw it out and completely drain it. I also used a nonstick fry pan. So important to use a nonstick pan here, that way the eggs don´t stick to the pan.

Ingredients

  • 2tbspextra virgin olive oil
  • 3clovesgarlic
  • 1/2onion
  • 2cupsfresh spinach
  • 3cage-free organic eggs
  • 1slicehavarti cheese
  • 1tomato
  • pinchsea salt
  • pinchblack pepper

Instructions

  1. Finely mince 3 cloves of garlic, finely dice 1/2 of an onion, reserve 2 cups of fresh spinach and crack 3 eggs into a bowl, season with sea salt & black pepper and whisk together until well combined

  2. Heat a nonstick fry pan with a medium heat and add in 2 tablespoons of extra virgin olive oil, after 2 minutes add in the diced onions and minced garlics, mix with the olive oil, after 3 minutes add in the 2 cups of fresh spinach and continue to mix, once the spinach has welted (about 2 minutes), season everything with a kiss of sea salt and some freshly cracked black pepper, quickly mix together and then pour in the egg mixture, after 1 minute run a spatula through the outer edges, to ensure the omelette is not sticking, after 2 minutes add in a slice of cheese and fold the omelette together, cook for 30 seconds and then flip the omelette, cook for another 30 seconds, transfer to a serving dish next to some sliced tomatoes, enjoy!

    What is the exact size of the pan that you used to make this omelette? You say large non-stick pan but that is not very descriptive. (my pan was way too large and it did not work well).

    The Amazon link that you posted was not very helpful either as it links to an entire set of pans.

    I really like your videos and recipes but I just wish that you could be a bit more precise on the equipment used.

      The size of the pan I used was 10 inch (25 cm), but you can use any size pan you want, does not need to be the exact size I am using. The most important thing is that it´s nonstick 🙂 much love

    This is delicious!. Even though my pan was a medium size, my burner is the ring electric that is lopsided so the oil pools to one side and heat control is difficult as the controls are a bit off, (causing this omelette to brown a lot without having the top layer cook all the way), and I have no idea how to flip the omelette in air, (or anything else for that matter, I was really surprised at how well this turned out.!!! Thanks!!

    Delicious! I never had an omelette with spinach, but I’ve been wanting to give one a try. I was wary of adding onions and garlic, so I went light on those two ingredients. However, it tasted great! I’m glad I came across this recipe.
